Stir-fried Dough Drops

Dough drop is a Beijing specialty , which can be cooked by boiling or stir-frying. The food of stir-fried dough drops is special with a unique flavor and fragrance. It was created by a mother and her daughter of a Mu family who operated the Guangfu Restaurant. Their names were spread far and wide for the uniquely delicious new food, and the daughter was nicknamed “ Mu Guiying” (a heroin in the Song Dynasty) and the restaurant was entitled “Muke Village” ( Muguiying’s hometown ).Later in 1930 Enyuanju Restaurant learnt to make the same food, where the recipe was further developed.

Ingredients:

wheat flour 500g, beef 100g, fresh vegetable 100g, soy sauce 50g, vinegar 5g, salt 1g, sesame oil 75g( for 5 plates).

Preparation:

1.Add 150g water in the flour and knead. Cut the dough into drops a bit larger than soy beans.

2.Add cold water in a wok and bring it to a boil. Put in the dough drops and stir in one direction with a slice so that the drops won’t stick to bottom. When all the dough drops rise to surface, ladle out and put in cold water, then take out for use.

3.Cut the beef into slices and clean , get fresh vegetable ready.

4.Add sesame oil in the frying pan. Heat with strong fire and stir fry beef shreds for 30 seconds. Add vinegar, soy sauce, salt, vegetable, and the prepared dough drop pellets. Stir-fry till the dough drops are soaked through with soy sauce. Remove and serve.
