| Steps 1)  Wash 
the cow tripe, shred into a "Comb" shape pieces  2)  Heat wok with water, add 
2 tbsp of salt, boil the cow tripe 3)  Dish up cow tripe, then chilled in 
cold water, dry them 4)  Heat wok with 4 tbsp of oil, add shredded ginger and 
chili 5)  Stir fry for few seconds, add cow tripe, stir fry gently 6)  
Pour in sauce, stir fry well until sauce is dried, dish up and serve

chive, you can use celery to instead it.
